To me it sounds like the issues would be with A.) the bread, and B.) making sure everything was hot and didn't cool down the potatoes. Throwing a couple thick slices of bread into a buttered/oiled pan like you're making grilled cheese and then making the sandwich sounds intriguing.

It would definitely have to be grilled, which is exactly what I did (with leftover thanksgiving turkey and some other junk I don't remember). I guess it wasn't that terrible, but the texture of the mashed potatoes was a problem. I think it would be better with the thicker/coarser type of mashed potatoes, too, as I mentioned in my previous post. I can't decide whether cheese would be a good or bad idea, but surely it couldn't hurt. (But what kind of cheese?? Maybe gouda?)
