Werner Herzog's Grizzly Man has been mentioned numerous times, but in fact his every documentary is a treat. Just to name a few:

God's Angry Man
My Best Fiend
Gesualdo: Death for Five Voices

Whatever topic he takes on, even one you've no interest in, you end up watching them till the credits. His fiction movies deserve mentioning too, Even Dwarfs Started Small being my favourite
