There are many albums you could start with. If you like sort of jazz-rock-orchestral get Hot Rats. If you like Rock get Apostrophe(') or "You are What You is" or "Over-nite Sensation". If you want to start with avant garde Zappa, get Freak Out! As a starter. Or just purely orchestral get "The Yellow Shark"

I like Frank Zappa humor, but I like Frank Zappa music even more. I would start with "Hot Rats" to get an idea of how brilliant his songwriting/playing are, and then explore the more humorous albums after. The humor is great, but I think as an introduction you should just be blown away by the musicality.

Thanks for the recommendations. 2 for Hot Rats so far.

I just bought The Real Frank Zappa Book the other day, and it hasn't disappointed.

I'm a relatively new Zappa fan and my collection of his stuff is small, but I love everything I've heard from the man, especially his jazz-fusion stuff. Any reccomendations on which album I should acquire next?

I already have Apostrophe, Ship Arriving Too Late to Save a Drowning Witch, Joe's Garage, Sheik Yerbouti, and The Grand Wazoo.

Hot Rats is essential. I'm rather partial to 'Tinsel Town Rebellion' too.
