Guess it just depends how you look at it. Black Sabbath obviously laid the groundwork for heavy metal, so to me, that would render them "the archetypal metal band".

Yes but a lot of people don't know about Sabbath's influence and only see the full package- songs, imagery, album covers etc and for that Iron Maiden FIT the accepted image of metal better than Sabbath. For the record I am not dismissing Sabbath. I prefer them (only just though!) to Maiden because of their influence, but metal is a package as much as it is about music.
