Could also try some Ayreon. And if the female vocals interest you, Draconian, Celestial Crown and Beseech.

I love Ayreon, but they are Progressive Rock/Metal, not Power Metal. However, Into the Electric Castle and Universal Migrator I is highly recommended.

^Go ahead and ruin my day. to make it easy for myself I group all Symphonic, Epic, Viking, w/e metal into one big genre......sweetass metal.

Default Recommend me some power metal with as much cheese as possible?

Something I kind of have a love hate relationship with so I've not explored much is the cheesier side of power metal. Stuff in the realm of Blind Guardian, Demons & Wizards, The Ring, and maybe a bit of Axel Rudi Pell kind of stuff. Much appreciated.
