Things I like about post rock:
It's satisfying
It's tasty
It goes to mellow and ambient places
It jumps back into huge crescendos
It can get extraordinarily heavy
It can be derivative as hell but bands like this keep it fresh

Reasons I dislike many of the bands in the genre, and don't tend to make the effort to find all the good stuff.
