Blood on the Tracks and Desire are Dylan's definitive seventies albums. He's also changed his sound several times from a straight folk artist (I'd recommend Freewheelin), his electric period (Highway 61 Revisited, Blonde on Blonde, etc), and the hit and miss period of the late sixties/early seventies that evolved into Blood on the Tracks. I don't listen to much Dylan after Desire but there are no doubt some gems all the way to today.
