RT and Urban, I will kill you both some day...

Irish things... right. To be honest, there's not much you can do except make him feel welcome. Just act like you normally would. If it's warm and doesn't piss rain all the time, he'll be happy :P

ummm... Irish.. about 5% of the population of Ireland can speak Irish fluently, so ná bí búrtha faoi sin, chances are he can't speak much of it himself. If he can, I apologise, just going on probabilities here :P

Ireland doesn't really have much in the way of things that we all have, or we all do (well, heavy drinking is about as close as it gets, but I for one am not particularly proud of that...), so as I said, just be yourselves, the more of an outward attempt you make to make him feel at home, the more pressure he is under to feel at home...

Does that make sense? it's a bit wandery. because everyone's really quite different here, it's next to impossible to be definitive about how any one person is going to react!

you could

austin-
go boating on lake travis
go see a live show in austin
get wasted on 6th street

san antonio-
visit the alamo
eat authentic mexican food (or tex mex)
goto spurs game

dallas \ ft worth-
havnt been here long enough to make a recommendation unless your a girl who likes malls (their is a galeria, a mall nicer than the galleria, and a regular mall within 10 miles of eachother)

houston-
check out nasa
hit up an astros\rockets game
not goto galveston

when you have a beach that looks like this

this doesnt exactly impress

when in doubt, goto a pub that serves up an imperial pint of arthur g the right way.
