Could be near Boulder pretty soon in fact. Thanks for the link, I'll have to see if the Asian market around the corner from me has smoked tofu - seems likely to be what makes the difference. I always get the plain super firm from whatever grocery store. I have tried the ones with a teriyaki marinade but it never came out right. The smoked + spiced might be a game changer.

I learned a bit about it living in Asia. I’m not skilled enough to make it look nice but it rocks in stews and stir fries. You don’t have to be an expert. It just naturally aborbs flavor and adds healthy bulk.

I'm still of the opinion that stir fry anything is basically cheating in a good way.

One time I went to restaurant in Japan that only served tofu cooked all kinds of ways. Gimmicky I know but it was pretty amazing.
