Yes, bacon is delicious, but it's not healthy so I pretty much stopped eating it years ago. Also, it's unkind to pigs, people who live near pig farms and the environment in general. (I'm sorry to remind people, but Pigs Make Methane, which is a greenhouse gas much worse than CO2.)

* Edit: Not limited to American bacon, of course; I'm sure good old British Bacon is just as damaging.

Sounds like you're on about wet cured here, that's the stuff you find most often in supermarkets. That stuff shrivels up. The dry cured stuff doesn't, it's a bit more expensive but much better imo.

I am an authority on this subject.

My credentials:
I have devoured breakfasts throughout Canada, the United States, Great Britain, and continental Europe. Thus I have tasted every variety of bacon imaginable.
My country, Canada, has its own variety of bacon. Thus I am an disinterested third party in the dispute between British and American bacon.

American or "streaky" bacon wins. Hands down.

If I'm making a BLT, I'm using thick cut American peppered bacon. Canadian bacon is just Ham, and that British stuff is just the byproduct of someone who has poor depth perception while holding a knife.
