It's mostly just consolidating the cast of characters and some of the side stories. At first I was a bit annoyed, especially as the first season followed the book almost word-for-word, but after the fourth episode I started to like some of the changes.
Apparently the next two seasons are going to be dedicated to
A Storm of Swords which has me wondering if they're really going to knuckle down and include all the material from that book. There's a lot to get through even if you do strip down some of the ancillary plots but they're also introducing Jojen and Meera Reed in this season, which has me curious as to how they're going to do that, unless they were already on their way to Winterfell.
