When you're an angsty little teenage brat metal sounds as cool as f**k, now i look back with embarrasment on some of the bands i used to listen to and the way i dressed. I can't believe i used to listen to Megadeth, Hammerfall and Dragonforce... cheese galore

But there's still some great, mature-sounding metal out there, minus the cheese lol. Mastodon, Electric Wizard, Reverend Bizarre and Opeth are probably the only metal bands i really listen to nowdays. Tool and Faith No More as well if you want to count them as metal.
I think tastes definitely mature as you grow older. There are loads of cheesy, angsty metal groups out there but there are also stacks of metal bands with more mature sounds.

Also... I don't know about everyone else but I have never ever thought of Tool as a metal band, ever.

In No Order...

Black Sabbath
Iron Maiden
Isis
Opeth
Slayer
Kreator
Neurosis
At The Gates
Mastodon
Metallica (before they got really bad. any album after the black one is a waste of time)

Nice list, although personally I cut Metallica off at And Justice for All.

I know a lot of people that think and justice for all is their best album. Personally, Im a big fan of Master of Puppets, but And Justice and The Black Album are still very good listens.
