What does number of albums released have to do with the quality of an artist?

it has nothing to do with the quality of the artist but it shows that the artist doesn't have room to grow or improve.

That's true of any band that's broken up.

I know that, why did they even break up?

No idea. Interest in other projects maybe? I know they all went on to do a bunch of other stuff including, most famously, forming Rancid.

Yes, Operation Ivy is miles better than Green Day. It really doesn't matter that they had one album, at all. As the title says though, this is opinion, and I believe that Operation Ivy's album had more good content than all of Green Day's albums.

After all The Stone Roses only had two albums (one of which was abysmal), but would you argue that Oasis is better because they had more albums?

No, I would argue that Oasis is better, period.

(Yes! There you have it, an unpopular opinion!)

Are you ****ing kidding me, what have Oasis even done that could surpass them? The Gallagher brothers would sell each other's testicles to come up with anything as good as this:
