Pretty much this. Just be sure to add some liquid. Beef, chicken, or vegetable stock/broth all work great. Rule of thumb is about 1/3rd up the pot to your base dry ingredients.

Slow cooking is good yes works best with cheap cuts of meat. Stewing steak and stuff like that. Any red meat.
