Coconut oil has a high smoke point so it's actually ideal For frying foods. Salmon cakes fried in coconut oil is OMG

I once made pancakes fried in coconut oil and topped with a mango lime compote. Never thought tropical pancakes could be so delicious.

Chop it up finely, steep it in water for a while, then strain.
