Mario Batali's Ragu Bolognese. To die for.



4 tablespoons extra-virgin olive oil
3 tablespoons butter
2 carrots, finely, diced
1 medium onion, diced
2 ribs celery, finely diced
3 clove garlic, sliced
1 pound veal, ground
1 pound pork, ground
1/4 pound pancetta or slab bacon, ground
1/2 tube tomato paste (be sure to use the concentrated tube stuff)
1 cup milk
1 cup dry white wine
Kosher salt and freshly ground black pepper
Parmigiano-Reggiano, for grating

Directions

In a 6 to 8-quart, heavy-bottomed saucepan, heat the olive oil and butter over medium heat. Add the onions, celery, and garlic and sweat over medium heat until the vegetables are translucent and soft but not browned, about 10 to 15 minutes. Add the veal, pork, and pancetta and stir into the vegetables. Add the meat over high heat, stirring to keep the meat from sticking together until browned. Add the tomato paste and let cook for about 5 minutes stirring constantly, then do the same with the milk, and finally the wine and simmer over low heat for 1 to 1 1/2 hours stirring often. Season with salt and pepper, to taste, and remove from the heat.

I made a crock pot chicken, rosemary potatoes, and avocado salad yesterday that rocked mine, and everyone else's socks off. From memory, except for the potatoes, here's what I did:

Crock Pot Chicken

Ingredients:
  • 1 whole chicken, gizzards removed
  • 1 large white onion quartered
  • 1 whole garlic bulb separated
  • Seasoning: Paprika, Lemon Pepper, salt, and pepper
  • 2 sprigs of Thyme
  • 2-3 tblspns EVO

Directions:
Place the quartered onion and separated garlic in the bottom of the pot. Place the chicken upside down, and rub the seasoning all over that half of the chicken. Turn the chicken right-side up, and season all over on that half of the chicken. Drizzle with EVO, and add the sprigs of Thyme on the sides. Turn on LOW for 6-8 hours.

Avocado Salad

Ingredients:
  • 1 Red Onion (sliced)
  • 1 Seedless Cucumber (sliced)
  • 4 Roma Tomatoes (sliced)
  • 3 Avocado's (sliced)
  • 1 cup chopped Cilantro
  • 1/2 cup Balsamic vinaigrette
  • 1/2 cup EVO
  • salt
  • pepper
  • 2 tblspns lemon juice

Directions:
Combine all ingredients in a large bowl.

Rosemary Potatoes (from an on-line recipe)

Ingredients:
  • 1 1/2 pounds small red or white-skinned potatoes (or a mixture)
  • 1/8 cup good olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoons minced garlic (3 cloves)
  • 2 tablespoons minced fresh rosemary leaves

Directions:
Preheat the oven to 400 degrees F. Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning. Remove the potatoes from the oven, season to taste, and serve.

Large pics, can't be arsed to resize. Curry, pilau rice and onion bhajis, quick ting.

Curry recipe is Chetna's but I made some changes to it.

Rice - white basmati, green cardomoms, cumin seeds, turmeric, butter, lemon juice, oil, salt.

Bhajis - flour, red onions, white onions, cumin seeds, green chillies, fresh coriander, turmeric, Kashmiri chilli powder, salt.

Sauce - plain yoghurt, mint sauce, turmeric, pinch of caster sugar.

More yum.

Have you guys ever tried Jamie Oliver's chicken in milk recipe? Absolutely amazing. Be sure to get every bit of zest off of the lemons. There should be no yellow left when you are done. And baste often. I use my cast iron dutch oven for this and it works great.

Made lamb yesterday and it was so good it ruined my life. Recipe was very simple: sear in butter and olive oil, then summer for two and a half hours with carrots, stuffed olives, onions, honey, spices to taste (I think I put ground mustard, pepper, garlic, oregano, cumin, and cayenne in there, I was drunk and don't remember), Guinness extra stout, and Flying Dog double dog double ipa. All served on a bed of mashed potatoes.

Doing beer battered fish tonight (cod) gonna get the chips from the chip shop though, it's not the same trying to make them.

Went to Nandos recently as well as I had a load of vouchers for restaurants. Had half a chicken extra hot, churrasco chicken thigh burger extra hot, grilled halloumi, coleslaw and peri peri chips. It was OK. Definitely not that hot though. And the only thing cheeky about it is the price.
